Serves 4
Shrimp
- 1 pound shrimp, 21-25 count, peeled & deveined
- 4 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1/4 teaspoon cayenne pepper
Salsa
- 1 ripe mango, diced
- 1 ripe avocado, diced
- 1/2 cup diced red bell pepper
- 2 tablespoons fresh cilantro, minced
- 1 tablespoon lime juice
- 2 tablespoons extra virgin olive oil
- salt & pepper to taste
For the shrimp, mix the garlic, olive oil and cayenne in a bowl. Add the shrimp and marinade in the refrigerator for at least 1 hour.
Combine all of the salsa ingredients and allow mixture to sit for 30 minutes to 1 hour to meld flavors.
Just before serving, sear shrimp in marinade in a preheated skillet over medium heat approximately 2 minutes per side. Serve shrimp topped w/salsa.
Brown rice with black beans make a nice accompaniment to this dish.
