Chef Bill's Fire Roasted Chili

  • 1 LB Ground Chuck
  • 1 Tbs corn meal
  • 1 Med yellow onion, peeled and chopped
  • 1 Med bell pepper, chopped
  • 4 Cloves garlic, minced
  • 2 tsp chilpolte chili pepper
  • 1 Tbs ancho chili powder
  • 2 Tbs dark chili powder
  • 1 Tbs cumin
  • 1 Tbs paprika
  • 1 small can tomato paste
  • 1 15-oz can diced fire roasted tomatoes
  • 1 15-oz can diced tomatoes with green chilies, undrained
  • 2 cups beef stock
  • 1 cup chicken stock
  • 1 bottle genius beer
  • 2 15-oz cans chili beans

Add ground chuck, onion, pepper and garlic to pot brown meat and sauté vegetables do not drain add the corn meal and stir in. Add your wet ingredients and then the spices. Simmer for one hour and add the chili beans and simmer 30 more min.
